In Japanese dining, the eye eats first. How to choose sushi boards, sets and accessories that frame the food — for restaurants and home service alike.
There's a saying in Japanese dining that the meal begins with the eyes. Nowhere is that more true than sushi, where the food itself is precise, colourful and geometric — and the serving pieces are the frame around it. Choose the frame well and even a simple maki selection looks like craft; choose badly and premium nigiri looks like a supermarket tray.
Maki rolls and nigiri are plated in lines, so they belong on elongated surfaces — rectangular plates or boards roughly 21–30 cm long. The linear arrangement gives the eye a rhythm to follow and keeps portions looking deliberate. Wooden boards add the warmth and authenticity that suits traditional service.
Our wooden sushi set comes in restaurant packs of 25, so every table gets the same considered presentation — and wood photographs beautifully against the colours of fresh fish.
Salmon orange, tuna red, avocado green — sushi brings its own palette. Neutral and natural backgrounds (pale wood, soft ceramic tones) let those colours lead. Save bold-coloured dishes for rice bowls like chirashi and poke, where a deep bowl with high sides also holds temperature better.
Sushi service is a ritual of small vessels: dipping bowls around 8–9 cm for soy, a rest for chopsticks, a small mound of wasabi and ginger with its own place on the board. These details are what make guests feel the service is authentic rather than approximate.
If you're rolling in-house — or selling the experience to guests — a proper bamboo rolling mat and making set is the starting point.
A restaurant sushi programme needs surprisingly few pieces done well: linear boards for maki and nigiri, deep bowls for rice dishes, small dipping bowls, and wooden accents for warmth. You'll find our sushi boards, sets and bamboo accessories on cwdh.ie — most available in packs of 25 for consistent front-of-house rollout.
